Ounce (oz)

One sixteenth of an avoirdupois pound, exactly 28.349523125 grams. Not to be confused with the troy ounce (31.103 g) or the fluid ounce, which measures volume.

Key Differences

  • 1There are three different ounces in common use. The avoirdupois ounce (28.35 g) is the one meant for food and general goods. The troy ounce (31.10 g) is used for precious metals. The fluid ounce measures VOLUME, not mass, and differs between the US and UK.
  • 21 oz = 28.349523125 g exactly. The common approximation of 28.35 g is accurate to about 1 part in 60,000, which is far below kitchen-scale resolution.

Background

The ounce descends from the Roman uncia, one twelfth of a libra — which is why the troy system, closer to the Roman original, has twelve ounces to the pound while the avoirdupois system has sixteen. The two coexisted in English commerce for centuries, avoirdupois for bulk goods and troy for gold, silver and gemstones. The gram came from the metric reform of the 1790s and was defined by water: one gram was the mass of one cubic centimetre of water at melting point.
